Ingredients:
- 5 bananas, mashed
- ½ cup coconut oil, melted
- ¼ cup coconut milk
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 1 cup brown rice flour
- 1 cup buckwheat flour
- ¼ cup desiccated coconut
- 1 teaspoon bicarb soda
- ½ teaspoon ground cinnamon
- ½ teaspoon clove powder
- ½ cup pecans
- ½ cup chocolate chips
- 1 ripe banana for garnish (optional)
Method:
- Preheat oven to 180*C
- Place banana, coconut oil, coconut milk, maple syrup and vanilla in a bowl and mix until combined
- Combine all dry ingredients
- Add banana mixture to dry ingredients bowl and mix until combined
- Add choc chips and pecans
- Transfer the mix to a loaf tin lined with baking paper
- Slice extra banana lengthways and gently place on top
- Bake for 45-50 minutes or until a skewer inserted into the middle comes out clean
- Allow to cool slightly in the tin, then turn out onto a wire rack and allow to cool completely before slicing
