Ingredients:
- 1 Cup Diced Figs
- 1/2 Cup Vegan Choc Chips
- 1/2 Cup Coconut Sugar
- 1 Cup Tahini
- 1/2 tsp Vanilla
- 1/2 Cup Plant Milk
- 1 Cup Almond Meal
- 1 Cup Buckwheat Flour
- 1/2 tsp Baking Powder
- Pinch of Salt
Method:
- Preheat oven to 170 degrees Celsius
- Combine tahini, coconut sugar, vanilla, salt and plant milk in a large mixing bowl
- Add figs and chocolate chips
- Mix through remaining ingredients until a dough is formed
- Line baking trays with baking paper
- Roll in to 10-12 balls and flatten with fingers or a forkful form desired cookie shape.
- Bake for 15 minutes or until golden brown
- Cool on drying rack. Or eat while still warm!
Makes 10-12 Medium sized cookies
